Lily Bulb
Yurine is a compound word consisting of Yuri (a lily) and Ne (a root), and the food specifically refers to an edible bulb of a lily species (not any lily). Individual petal-like pieces of a bulb are carefully separated, rinsed, and then boiled with a small amount of salt. The natural mild sweetness and pleasing starchiness make an elegant Kinton (sweet-tasting mashed root vegetables), a typical Osechi Ryori (New Year’s cuisine) item or an ingredient for dishes such as Chawan Mushi (steamed egg curd). It has also been used as a traditional medicinal ingredient.
