Japanese Royal Fern
Scientifically named “Osmunda japonica”, Zenmai is a type of flowering fern or osmund. Along with Warabi, it’s one of the spring Sansai items, whose spiral-headed young leaves are eaten. After removing Aku (acute bitterness), it’s cooked into Tsukudani, Ohitashi, Goma Ae or Nimono. Not so popular as Warabi, but it’s still a loved spring Sansai.
